I'd like to give a shout-out to a very helpful tool we've only just discovered recently: parchment paper.
You see, our baking sheets? They're not the best anymore. They were non-stick when we got them about 4 or 5 years ago, but now they're all-stick. Uneven, warping a little... just a mess. Plus someone left one in during a preheating cycle after not properly cleaning it. (Me.)
So yes, we'll be getting new ones. Better ones. But in the interim, parchment paper has made things just dandy. We used them yesterday for some cookies and it was truly a sight to behold: even baking all around, perfect unburned bottoms, and non-stick EXTREME TO THE MAX!!! While it's no substitute for new stuff, it makes the lean times between good quality cookie sheets feel a little less lean.
It's a kitchen essential for sure. Good stuff.
